PECTOLYTIC ENZYME FOR COLD MACERATION AND CLARIFICATION

DESCRIPTION

ZYMOCLAIRE® CC Plus is a concentrated pectolytic enzyme, produced from selected strains of Aspergillus niger. ZYMOCLAIRE® CC Plus is specially developed for clarification and maceration at low temperatures. It has very good activity at low temperature and low pH. Used during maceration, ZYMOCLAIRE® CC Plus increases the yield of free juice and the extraction of aromatic precursor and thiol compounds from the grape skin. ZYMOCLAIRE® CC Plus is also very suitable for must clarification even at low temperatures. It ensures very fast and good clarification of the must and good sedimentation of the lees.

It contains different activities: The Pectin-lyase (PL, IUB 4.2.2.10), main activity fundamental to break down the esterified pectins; Hemicellulasic and Cellulasic (CMC) help the extraction, Polygalacturonase (PG) rich in endo – PG activity that in synergy with the Pectin-lyase (PL) performs quick clarifications and help the wine filterability; Polygalacturonase and high Arabanase activity that degrade the pectins.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOCLAIRE® CC Plus s is a granulated enzyme standardized with maltodextrin with minimum activity of 450 PLU/g.
