ENZYME WITH ß-GLUCANASE ACTIVITY FOR “SUR LIES” MATURATION AND AGING OF THE WINES

DESCRIPTION

ZYMOCLAIRE® FD is a highly concentrated β-glucanase enzyme produced from selected strains of Trichoderma harzianum. ZYMOCLAIRE® FD has been developed especially to improve the autolysis of the yeast cells during the maturation with the yeast lees thus improve the organoleptical profile and the mouthfeel of the wine. It is also recommended for treatment of all the wines obtained from late harvests.

ZYMOCLAIRE® FD is very good also for treatement of grapes with Botryris. It decrades the pectins and the glucans and facilitates the process of pressing and filtration of the wines.

It contains different activities: β-1,3 β-1,6 glucanase (βd GLU, IUB 3.2.1.58) is the main activity; the Hemicellulase and Cellulase (CMC) activities helps obtaining better clarification and filtration; the Pectin-lyase (PL) fundamental to break down the esterified pectins; the Polygalacturonase (PG) rich in endo – PG activity that in synergy with the (PL) performs quick clarifications; the Arabanase (AR) that degrade the ramified parts of the pectins; the Pectinesterase (PE) that support the PG breaking down pectins.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOCLAIRE® FD is a granulated ß-glucanase, standardized with maltodextrin at minimum activity of 100 βGLU units/g.

APPLICATION AND DOSAGE

ZYMOCLAIRE® FD is very active at the must pH (ideal between pH 3.0 and 4.0). Add (after dilution at 5% in water) directly into the must or wine, and well homogenized into the mass.

PACKAGE AND STORAGE

ZYMOCLAIRE® FD is available in 100g plastic containers in 1 kg boxes. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
