PECTOLYTIC ENZYME FOR MUST CLARIFICATION BY FLOTATION

DESCRIPTION

ZYMOCLAIRE® FLOTTATION L is a concentrated pectolytic enzyme, produced from selected strains of Aspergillus niger.

ZYMOCLAIRE® FLOTTATION L has been developed especially for clarification by flotation. It hyrlolises the pectins and decreases the viscosity of the must thus ensures easy and succesful clarification of the must by flotation.

ZYMOCLAIRE® FLOTTATION L contains different activities: Pectinlyase (PL, IUB 4.2.2.10), main activity, fundamental to break down the esterified pectin; Polygalacturonase, (PG) rich in endo-PG activity that, in synergy with the (PL), assure a faster clarification; Pectin esterase (PE), which prepares the substrate for the PG action and Arabanase (AR) for a further degradation of ramified parts of the pectin.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOCLAIRE® FLOTTATION L is a pectolyc liquid enzyme, standardized with KCl and stabilized with potassium sorbate, with minimal activity 560 PLU/g.

APPLICATION AND DOSAGE

ZYMOCLAIRE® FLOTTATION L is an enzyme for quick flotation at ph particular for the must. Add (after dilution at 5% in water) directly into the must and well homogenized into the must.

PACKAGE AND STORAGE

ZYMOCLAIRE® FLOTTATION L is available in 1l containers. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
