PECTOLYTIC ENZYME FOR RAPID MUST CLARIFICATION DURING PRODUCTION OF WHITE WINE

DESCRIPTION

ZYMOCLAIRE® HIGH CG is a concentrated pectolytic enzyme, produced from selected strains of Aspergillus niger.

ZYMOCLAIRE® HIGH CG has been developed especially for rapid static clarification of musts which has also good clarification activity even at low temperatures. Thanks to the high activity of ZYMOCLAIRE® HIGH CG, it improves very quicly the clarity of the must even in difficult technological conditions (difficult for clarification musts, low temperatures). It hydrolyzes the pectins and reduces the must viscosity.

It contains different activities: The Pectin-lyase (PL, IUB 4.2.2.10), main activity fundamental to break down the esterified pectins; Hemicellulasic and Cellulasic (CMC) help the extraction, Polygalacturonase (PG) rich in endo – PG activity that in synergy with the Pectin-lyase (PL) performs quick clarifications and help the wine filterability; Polygalacturonase and high Arabanase activity that degrade the pectins.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOCLAIRE® HIGH CG is a granulated powdered pectnase, standardized with maltodextrin at minimum activity of от 450 PLU/g.

APPLICATION AND DOSAGE

ZYMOCLAIRE® HIGH CG is an enzyme for quich clarification at ph particular for the must. Add (after dilution at 5% in water) directly into the must and well homogenized into the mass.

PACKAGE AND STORAGE

ZYMOCLAIRE® HIGH CG is available in 100g plastic containers in 1 kg boxes. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
