PECTOLYTIC ENZYME FOR TREATMENT OF MUST FOR WHITE AND RED WINES

DESCRIPTION

ZYMOCLAIRE® PRO ICE is a concentrated pectolytic enzyme containing significant activity of β-glucosidase, produced from selected strains of Aspergillus niger.

ZYMOCLAIRE® PRO ICE has been especially developed for the cold maceration and aroma extraction from must of white grapes, and to improve the colour and aroma extraction during the cold maceration of the red grapes. It has good activity even at low temperatures. During the maceration of white grapes, ZYMOCLAIRE® PRO ICE extracts the aromatic precursors and releases the varietal aromatic compounds contained in the grape skin, increases the yield of free juice and facilitates the clarification of the must. When used during the cold maceration of red grapes, ZYMOCLAIRE® PRO ICE increases the extraction of varietal aromas and anthocyanins from the grape skin. ZYMOCLAIRE® PRO ICE reveals the typical varietal aromas of the grapes and helps to obtain wines with intensive and complexe aromatic profile.

It contains different activities: The Pectin-lyase (PL, IUB 4.2.2.10), man activit,fundamental to break down the esterified pectins; the β-glucosidase (βd GLU, IUB 3.2.1.21), allows releasing the aromatics components in wine; the the wine filterability Polygalacturonase (PG) rich in endo – PG activity that in synergy with the (PL) performs quick clarifications and help; the Arabanase (AR) that degrade the ramified parts of the pectins; the Pectinesterase (PE) that support the PG breaking down pectins.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOCLAIRE® PRO ICE is a granulated pectinase, standardized with maltodextrin at minimum activity of 450 PLU/g and 1000 β-d-GLU units/g.

APPLICATION AND DOSAGE

ZYMOCLAIRE® PRO ICE is an enzyme for cold maceration. Add (after dilution at 5% in water) directly into the must and well homogenize into the mass.

PACKAGE AND STORAGE

ZYMOCLAIRE® PRO ICE is available in 100g plastic containers in 1 kg boxes. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
