PECTOLYTIC ENZYME FOR TREATMENT OF MUSTS OF WHITE AND RED WINES

DESCRIPTION

ZYMOROUGE® EG is a concentrated pectolytic enzyme, produced from selected strains of Aspergillus niger.

ZYMOROUGE® EG has been developed especially to improve the results during the maceration and clarification of musts from white or red grapes. While used during maceration, ZYMOROUGE® EG improves the extraxtion and increases the yield. ZYMOROUGE® EG is also suitable for clarification of must for white wines.

It contains different activities: Pectinlyase (PL, IUB 4.2.2.10), main activity, fundamental to break down the esterified pectin; Polygalacturonase, (PG) rich in endo-PG activity that, in synergy with the (PL), performs faster clarifications; Pectin esterase (PE), which prepares the substrate for the PG action and Arabanase (AR) for a further degradation of ramified parts of the pectin.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOROUGE® EG is a granulated enzyme standardized with maltodextrin at the activity of 350 PLU.

APPLICATION AND DOSAGE

ZYMOROUGE® EG is a clarifying enzyme very active in maceration. Add (after dilution at 5% in water) directly into the must and well homogenized into the mass.

PACKAGE AND STORAGE

ZYMOROUGE® EG is available in 100g plastic containers in 1 kg boxes. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
