PECTOLYTIC ENZYME FOR PRODUCTION OF HIGH QUALITY RED WINES

DESCRIPTION

ZYMOROUGE® Super EG is a concentrated pectolytic enzyme, produced from selected strains of Aspergillus niger, made for production of red wine.

ZYMOROUGE® Super EG has been developed especially for maceration of red grapes and for colour, varietal aromas and anthocyans extraction for production of structured, quality red wines. It extracts and increases the fruity aromas in the wine, degradates the pectin compunds providing excellent colour stability and increases the yield. ZYMOROUGE® Super EG avoids extraction of astringent tannins.

It contains different activities: Pectinlyase (PL, IUB 4.2.2.10), main activity, fundamental to break down the esterified pectin; Arabanase (AR) for a further degradation of ramified parts of the pectin; Polygalacturonase (PG) rich in endo-PG activity that, in synergy with the (PL), perform a faster clarification; Hemicellulase and Cellulase (CMC) help the clarification and the filtration and increase the extraction of structuring compounds and colour; Pectin esterase (PE), which prepares the substrate for the PG action.

The enzyme has been purified from cinnamyl-esterase activity
