ß-GLUCOSIDASE ENZYME FOR RELEASE OF VARIETAL AROMAS

DESCRIPTION

ZYMOVARIETAL® AROMA G is a highly concentrated β-glucosidase enzyme produced from selected strains of Aspergillus niger. ZYMOVARIETAL® AROMA G has been developed especially for the aroma liberation at the end of the alcoholic fermentation.

It contains different activities: β-glucosidase (βd GLU, IUB 3.2.1.21), that is the main activity, allows releasing the aromatics components in wine. The Pectin-lyase (PL, IUB 4.2.2.10) fundamental to break down the esterified pectins; the Polygalacturonase (PG) rich in endo – PG activity that in synergy with the (PL) performs quick clarifications and help the wine filterability; the Pectinesterase (PE) that support the PG breaking down pectins; the Arabanase (AR) that degrade the ramified parts of the pectins.

The enzyme has been purified from cinnamyl-esterase activity.

ACTIVITY

ZYMOVARIETAL® AROMA G is a granulated ß-glucosidase, standardized with maltodextrin at minimum activity of 2000 β-d-GLU units/g.

APPLICATION AND DOSAGE

ZYMOVARIETAL® AROMA G is recommended for liberation of varietal aromas from white wines through enzyme hydrolysis of the aromatic precursors, extracted before the fermentation stage.

ZYMOVARIETAL® AROMA G is an enzyme that is active at the end of fermentation. Add (after dilution at 5% in water) directly into the wine and well homogenized into the mass.

Contact duration: 2 or 3 weeks

Optimal temperature: more than 15°С

After reaching the needed aromatic level (that should be defined after periodical tasting) the enzyme activity shall be deactivated by using bentonite (5-10 g/hl).

PACKAGE AND STORAGE

ZYMOVARIETAL® AROMA G is available in 100g plastic containers in 1 kg boxes. Is best stored in the original packaging in a cool and dry place (<15 °C) in order to maintain the maximum activity during 24 months.
